Chardonnay is synonymous with freshness, minerality and purity.
Pinot Blanc reveals fruit aromas and contributes to the structure of the wine. The ageing in oak barrels brings diversity and complexity to the aromas.
BLEND: More than half Chardonnay, the rest Pinot Noir.
VINEYARD: The vineyard is located in Aube, south of the area that was granted with Champagne designation, and extends over the Ource, Arce and Seine valleys on lands with varied soils.
CREATION: Harvested on a south facing terroir. The base of the limestone bedrock is underlined by thin marl beds from the Kimmeridgian period, leaving a greyish subsoil, tinged with white marl, the perfect vineyard soil.
AGING: Wine aged in oak barrels and pipes, second fermentation in the bottle (prise de mousse), followed by an ageing period of at least 18 months, reflecting the white varieties of the Barrois hillsides.
COLOUR: Light golden colour, fine and persistent bubbles giving a very intense nose.

PALATE: Pure, mineral and well balanced. The finish reveals fine woody notes and reinforces all the qualities of the white grape varieties, appreciated by gastronomes.
HOW TO ENJOY: Goes well with oysters, shellfish, noble fish such as turbot.
